Ultimate Rocky Road
600g milk chocolate buttons
50g white chocolate buttons
100g roasted peanuts
100g roasted macadamia nuts, halved
100g raspberry lollies, halved
520g marshmallows, halved
1. Melt your milk chocolate on a double boiler making sure the water does not touch the bottom of your bowl. Warm your nuts in the oven at 80°C for 5 minutes. Prepare a baking tray with baking paper and set to the side for later.
2. In a large mixing bowl add in your marshmallows and raspberry lollies, followed by your mixed nuts and melted milk chocolate. Quickly mix together with a spatula then tip out on prepared tray. Evenly spread out along the prepared tray then allow to set.
3. Melt your white chocolate in the microwave in a small glass or ceramic bowl in 30 second intervals making sure to stir after each cooking cycle. Place chocolate in a small zip lock bag and cut a small piece off the corner of the bag. Squeeze out the white chocolate over the rocky road to make a cross pattern over the top.
4. Refrigerate for 15 minutes or until fully set. Cut into small squares and serve.
